Here are three fantastic recipes to help you host your own island getaway from your own kitchen.
1. Sunshine Mocktail
Created by Malamala Beach Club’s bartenders, this sunshine mocktail is usually enjoyed beachside or in a private cabana. But you can still channel those island beach club vibes from your kitchen barstool with drink in hand.
Ingredients (serves 2)
- 1/2 Ripe banana
- 1/4 Papaya (or passionfruit)
- 1/4 Pineapple
- 15ml Passion juice
- 30ml Mango juice
- 30ml Orange Juice
- 15ml lime juice
- Blend, strain and pour over ice.
- Best served cold. Enjoy!
2. Coconut Chocolate Brownie
One of Fiji’s best kept secrets is Taste Fiji—a local family run café in Nadi. Renowned for their decadent sweet bar and barista coffee, you can now enjoy one of their crowd favourites at home for afternoon tea or dessert!
Ingredients (serves 16)
- 250g butter
- 500g brown sugar
- 125g cocoa
- 4 eggs
- 1 teaspoon vanilla extract
- 100g desiccated coconut
1. Line a 24cm square cake tin with baking paper and preheat the oven to 180°C (350F).
2. In a small saucepan gently melt the butter with the sugar. Add the cocoa and mix well.
3. In the bowl of an electric mixer beat the eggs and vanilla until light and fluffy.
4. Pour the chocolate mixture and coconut into the eggs, mix until well combined.
5. Turn the batter into the prepared cake tin.
6. Bake for 40 minutes, the centre will still be a little soft which is as it should be.
7. Allow to cool and then cut into 16 pieces. Enjoy!
3. Wai Tom Donu (Water, Dip, Coral Trout)
Bring some tropical flavours to your next home cooked dinner with this Fijian inspired dish. Thanks to one of Fiji’s leading chefs, Lance Seeto, your next fish dish can help bring you back to that barefoot dining in the sand kind of feeling.
Ingredients (serves 2)
- 1 whole scaled, gutted white-fleshed fish with skin on.
- Half a cup of lime/lemon juice
- One large tomato or several small, diced up with flesh removed
- 1/2 diced red onion
- 1 cup of clean sea water (or home-made salt water)
- Fresh ground coconut
- Papaya (or passionfruit)
- Edible Flowers
- Kumquat (or lime or lemon)
1. Score the fish on both sides and place onto a BBQ or hot charcoal-grill.
2. The charcoaled skin of the fish is a key flavour so don’t be afraid to let it crisp and burn in parts.
3. Turn over as required.
4. While the fish is cooking put the diced onion, tomato, lime juice and clean seawater into a shaker and give it a good shake.
5. Serve the fish with the tomato mix and garnish with ground coconut, papaya, kumquat, coriander and edible flowers. Enjoy!
