15 Minute Pantry Pasta

15 Minute Pantry pasta, an easy weeknight dinner idea!

On nights when there is nothing in the pantry to cook and the last thing you want to do is head to the supermarket, it is good to have a fallback dish that can be made with few ingredients that most people will have in the cupboard.

This dish is simple and delicious and the ingredients can also be substituted easily – if you don’t have spring onions you can use parsley or broccoli instead, if you don’t have black olives try cubed bacon or pancetta for saltiness.

Ingredients (serves 2-3)

300 grams of dried pasta (we like to use spiral but any shape will work)

1 bunch of spring onions

75 grams of black Kalamata olives, pitted and sliced

1 clove of garlic, crushed

1 teaspoon of dried chilli

1/4 of a cup of olive oil

1/4 of a cup of pine nuts, toasted

50 grams of shaved Parmesan cheese

Sea salt and pepper, to serve

Method

  1. Bring a large pan of salted water to the boil and cook pasta according to packet instructions.
  2. In the meantime, while the pasta is cooking heat olive oil over a medium heat. Add spring onions, garlic, chilli and olives and gently sauté for 3-4 minutes.
  3. When pasta is cooked, drain and toss through spring onion mix. Top with toasted pine nuts. Season with salt and pepper and serve topped with shaved Parmesan cheese. Enjoy!
