Eat: A Simple Cheesy Pizza Recipe and the Last Weekend of Autumn in Australia

We are heading in to the last weekend of Autumn here in Australia and the beautiful autumn leaves are still out in full force. The weather is set to be lovely too – cool and mild with some much needed autumn sunshine. Being the weekend, a simple pizza recipe is on the menu and this three cheese pizza takes no time to make which is perfect for a Friday night.

Ingredients

1 large pizza base – store bought or homemade are both fine

2 tablespoons of tomato paste

1 cup of mozzarella cheese

1 tablespoon of Mascarpone cheese

1/4 of a cup of grated Parmesan cheese

1 free range egg

1 tablespoon of finely chopped fresh herbs – we use rosemary, oregano and thyme

1 handful of rocket and baby spinach, dressed with balsamic and olive oil

To make, pre-heat oven to 180 Celcius (350 Fahrenheit). Top pizza base with tomato paste and smooth out to about 1 inch from the edge, sprinkle with herbs. Add grated mozzarella cheese and crack a free range egg in the middle of the pizza. Dollop mascarpone cheese on top on each quarter of the pizza. Sprinkle parmesan cheese evenly on top. Bake in oven for approximately 20 minutes until the pizza is golden and cheese is bubbling. Remove from oven and top with rocket mix. Serve and enjoy!
