This avocado smash is delicious, versatile, simple to make, packed full of skin-loving ingredients and is delicious any time of the day.
Ingredients
1 ripe avocado
1/4 cup chopped walnuts
50g feta, crumbled
1/4 cup basil leaves, shredded
1 tbs Olive oil
To make scoop out the avocado in to bowl and lightly mash. Add crumbled feta, basil leaves and walnuts. Mash very lightly with a fork to combine. Season with salt and pepper and drizzle with olive oil. Serve topped on grainy toast. ELE tip – this smash also works great as a topping on baked potatoes or sweet potatoes or even tossed through pasta for a healthy, simple dinner. Enjoy!
