This beautiful bright hummus is healthy, delicious and easy to make.
Ingredients
2 large beetroot, peeled, roasted and roughly chopped
2 cloves of garlic, roasted (optional)
1 x 400g tin of cannellini beans, drained
Juice of 1/2 lemon
1/2 cup basil leaves
1 tablespoon of olive oil
Add all ingredients to a food processor and blitz until a smooth paste is formed. Season with salt and pepper and serve. This hummus is lovely on toasted bread or pita with feta cheese or as an accompaniment to a grain salad, fillet of roasted salmon or as a dip. Enjoy!
