Eat: Edamame, Pea and Mint Smash

Edamame, Pea and Mint Smash

This simple, healthy and gorgeously green smash is easy to make and full of flavor.

Ingredients
1 cup of shelled and cooked edamame beans
1 cup of cooked peas
1/2 cup mint leaves
1/2 cup flat leave parsley
Large dollop of cream fraiche
Squeeze of fresh lemon juice
Drizzle of extra virgin olive oil

Add all ingredients to a food processor and blitz until a rustic paste is formed (not too smooth). Season with salt and pepper. We like to serve this smash on lightly toasted sour dough bread, topped with mint leaves and feta. Alternatively, is is delicious tossed through cooked pasta, drizzled with olive oil and topped with shaved parmesan cheese or used as a bed of mash to accompany roasted Alantic salmon fillets or lamb. ELE tip- if you can’t find edamame beans in your local supermarket try a good Asian grocer. Enjoy!

  7. wow! that looks super green and colorful! just wondering, how long did it took to be made? because if it can be premade it sure would be great lunch for school.

    • Hi, it only takes about 10 minutes to make once you have the ingredients prepared and it would be great in school lunches – you could refrigerate and use for a day or two after it is made. Enjoy!

    • Hi it only takes about 15 minutes to make and can be made the day before- you can store in the fridge in an airtight container. Enjoy!
