Eat: Grilled Haloumi, Asparagus, Pea, Rocket and Mint Salad

This salad is so fresh and delicious, it can be served on its own or as a side for grilled chicken or fish. The grilled haloumi, fresh greens and zesty lemon are the perfect combination.

Ingredients

100g of haloumi, sliced

2 cups of fresh baby rocket leaves

1 bunch of asparagus

1/4 cup of mint leaves, shredded

1/4 baby peas, cooked

Juice of half a lemon

1 tablespoon of olive oil

To make, grill the asparagus spears and haloumi in olive oil over a medium heat until golden, turning the haloumi once so both sides cook through. Set aside. On two plates arrange rocket leaves and add cooked peas and shredded mint. Divide asparagus and grilled haloumi equally between the plates. Drizzle with olive oil and fresh lemon juice. Season with salt and pepper and serve. Enjoy!

  3. Had this for supper and it was delicious. There were substitutions, no asparagus but edamame and butter beans instead. Satisfying and light. What’s not to love. Thanks for posting this.
