Eat: Homemade Pizza with Smoked Bacon, Blue Cheese, Caramelised Red Onion and Thyme Flowers

This pizza is the perfect mix of salty, creamy and sweet, it tastes delicious and the homemade pizza base is simple and foolproof to make. We like to lightly caramelise red onions to balance the rich, creamy blue cheese. If you cannot get thyme flowers (we grow our own thyme in the ELE kitchen garden) sprigs work perfectly well.

Ingredients

Pizza Base
2 cups of plain flour

8g dry yeast

1 tsp caster sugar

1/2 tsp salt

2 tbs olive oil

3/4 cup lukewarm water

Topping

1/4 cup of tomato paste

1 clove of garlic, crushed

1 cup of grated cheese

2 rashers of smoked bacon, roughly sliced

1 red onion, thinly sliced

100g of blue cheese

1 tablespoon of olive oil

1 tbs of brown sugar

Handful of thyme flowers

To make pizza base mix dry ingredients in mixing bowl, add oil and water and mix to a soft dough. Knead on a floured surface for 2-3 minutes.

Return to the mixing bowl, cover with cling wrap and leave in a warm spot for 30 minutes until the dough doubles in size.

When the dough has risen, remove from bowl and knead gently for 1-2 minutes. Roll the dough to desired size and thickness.

To make caramelised red onions, add onions, olive oil and brown sugar to a saucepan and cook on low heat until the onions are fully cooked through and the sugar has slightly caramelised.

To make tomato paste mix tomato paste, olive oil and garlic and spread evenly over pizza base. Top with grated cheese, sliced bacon, red onion, crumbled blue cheese and thyme flowers.
Bake in a hot oven until the cheese is melted and the pizza base is golden. Enjoy!
