Eat: Roast Beef, Spinach and Hummus Iron-Boosting Salad

Many of us don’t get enough iron in our diets so this salad, which is packed with iron-boosting ingredients, is the perfect way to incorporate more of this essential mineral into your diet. Red meat, leafy green spinach and chickpea-packed hummus are some of the most iron rich foods available and combined with the good fats from olive oil and avocado this salad is a powerhouse of goodness. It’s also super quick to prepare and tastes delicious.

Ingredients

100 grams of thinly sliced roast beef

1 cup of baby spinach leaves

6-8 cherry tomatoes, halved

1/2 an avocado, sliced lengthways

1 tablespoon of olive oil

2 tablespoons of hummus

Sea salt and black pepper

Assemble the salad by piling spinach leaves in bowl, topping with finely sliced roast beef (you can get this from most delis or use leftovers from a roast beef dinner) and halved cherry tomatoes. Top with avocado slices, dollop on hummus, season with salt and pepper and drizzle with olive oil. Enjoy!
