This pizza is so simple and tastes delicious, making it the ideal snack.
Ingredients
Pizza Sauce
1 tin of crushed tomatoes
1/2 small onion, finely chopped
Pinch of dried oregano and basil (add more if using fresh)
1 tablespoon of olive oil
1/2 teaspoon of brown sugar
Topping
3/4 of a cup of grated cheese (mozzarella or tasty)
1 free range egg
Handful of baby rocket
Thin pizza base – shop base or homemade are both ok, we often use a wheat free base which also works well.
To make the tomato sauce, soften onions in olive oil over a low heat until translucent (not brown). Add tomatoes, herbs, brown sugar and a pinch of salt and pepper and allow to simmer until the sauce reduces and forms a thicker consistency. Note this sauce can be made in advance and refrigerated to use when required.
Spoon the cooled pizza sauce on to the base, top with grated cheese and crack an egg in the middle. Place in a hot oven and cook for approx. 10-15 minutes until the base is golden and the egg white is cooked through. Remove from the oven, top with fresh baby rocket, drizzle with olive oil and serve. Enjoy!
