Seared Sesame Tuna, Edamame and Avocado Salad

This very simple salad is packed full of delicious ingredients that are good for you and taste great. The healthy fats of the avocado, tuna and olive oil are great for your heart and the addition of the edamame beans and rocket leaves add a boost of delicious greens.

Ingredients

1 fresh tuna fillet

2 tablespoons of sesame seeds

1/2 an avocado, sliced

1/2 a cup of edamame beans, blanched

1 cup of baby rocket leaves

1 tablespoon of peanut oil

Dressing

1 dessert spoon of honey

1 teaspoon of fish sauce

2 tablespoons of soy sauce

1 tablespoon of olive oil

Dash of sesame oil

Method

  1. To make dressing combine all ingredients and mix well, set aside.

2. Coat tuna fillet in sesame seeds until fully covered. In a frypan heat peanut oil and add tuna, searing each side until the tuna and sesame seeds and golden (approx. 2-3 minutes each side).

3. Remove from heat, allow to cool slightly and slice thinly.

4. To assemble salad add rocket leaves , edamame and avocado to a bowl. Drizzle with dressing and top with tuna slices. Season with salt and pepper. Enjoy! 

ELE tip – this salad also works great with chicken or salmon if you are unable to get fresh tuna fillets.
