Eat: Stuffed Avocado

These stuffed avocados are so simple to make and are perfect as a side, snack or as a light lunch. To make halve an avocado lengthways and scoop out to create a large circle. Fill with cherry tomatoes, feta, shredded red cabbage and continental parsley. Drizzle with olive oil and lemon justice and serve. This recipe is adaptable and can be filled with any of your favourite ingredients. Enjoy!
