Tomato and Caper Salad with White Balsamic Vinegar

Deliciously fresh, healthy and simple this tomato salad can be whipped up in under ten minutes and is beautiful to accompany white fish or meat or on its own for a light lunch served with fresh bread.

If you have tomatoes growing in the garden it is a great way to showcase beautiful, fresh homegrown produce.

Ingredients

1 large punnet of mixed cherry tomatoes*

1 tablespoon of baby capers

2 tablespoons of white balsamic vinegar

2 tablespoons of olive oil

Handful of fresh basil leaves

50 grams of fresh goats curd cheese

Sea salt & cracked pepper

*if you can only get red tomatoes the salad will still work well, we just love the mixed tomatoes for the beautiful colours)

Method

1. Halve the cherry tomatoes and arrange on a large plate or bowl.

2. Add capers on top and drizzle with white balsamic vinegar and olive oil.

3. Crumble with fresh goats curd.

4. Season with sea salt and cracked pepper and top with fresh basil leaves. Enjoy!
