Live: Autumn and a Simple Pumpkin Soup 



Falling leaves, crisp sunny days, log fires, long country walks- there is so much to love about autumn in southern Australia. A simple hearty soup with crusty bread is another of autumn’s pleasures, and this pumpkin and thyme soup is so easy and delicious you will want to enjoy it all year round. Simply add a whole small  pumpkin (peeled, deseeded and chopped), to a large saucepan with 2 onions (peeled and roughly chopped), chicken stock (the liquid should completely cover the pumpkin by about 1-2 inches) and and a handful of fresh thyme leaves. Simmer until the pumpkin is completely cooked through. Remove from heat and allow to cool slightly before blending in batches with a dash of fresh cream. Return to low heat, season generously and serve, topped with a drizzle of cream and a sprig of thyme. Enjoy!

  2. A beautiful, simple recipe and gorgeous photos too. It’s still quite warm here in Brisbane – we are longing for the weather to really cool. The photos of the autumn leaves are just beautiful.     • Thank you Margaret! Hoping to get up to beautiful Brisbane again soon and enjoy some sunshine. It’s lovely and cold in Victoria but I’m sure by winter we will be dreaming of sunny Brisbane weather!

    • Spring is so beautiful too, we will be in France in fall later this year so hopefully can get some beautiful shots in the countryside!

Spring is just starting where I am as well… had a stupid moment and went back to check the date… thinking this must be an old post… (then thought oh ya… Australia)… wow what beautiful pictures.. and I will be definitely making this soup. We love pumpkin soup… Not sure I can buy pumpkin at this time of year… darn… On a side note I will also be going to France (next month) to see family… very excited… (someday I hope to make it to Australia)
