Barramundi (or Asian Sea Bass) is one of our favorite fish dishes to cook. Prized for its delicate flavor and meaty texture Barramundi is found in the water of Asia, the Middles East and Oceania. Our recipe for Barramundi with Mango and Avocado Salsa, lets the natural flavor shine through, and pairs it with a sweet and tangy salsa made from fresh mango and creamy avocado. The result? A bright and flavorful dish that’s perfect for a simple dinner or a special occasion.
Barramundi with Mango & Avocado Salsa (Serves 4)
Ingredients
4 thick barramundi fillets 2 tsp smoked paprika 1 tsp garlic powder 1/2 tsp salt 1 avocado, peeled, pitted, and cubed 1 mango, peeled, pitted, and cubed 1 handful of cilantro, chopped Salt and pepper, to taste Juice of 1 lime 1 jalapeño pepper, seeded and finely chopped (optional) 1/2 red bell pepper, chopped 1/4 red onion, finely chopped 1 tbsp olive oil
Method
In a small bowl, mix together the smoked paprika, garlic powder, and salt. In another bowl, combine the cubed avocado, cubed mango, cilantro, salt, pepper, lime juice, jalapeño pepper (if using), red bell pepper, and red onion. Toss gently to combine.
Pat the fish fillets dry and sprinkle both sides with the spice mixture. Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the fish fillets and cook for 3-4 minutes per side, or until golden brown and cooked through. If your fish fillets are thinner, they may cook faster.
Serve the fish with the mango and avocado salsa on top or on the side.
