Sticky Shrimp Bahn Mi Recipe
Ingredients (Serves 2)
1 fresh crunchy baguette, cut in half and sliced through the middle
16 shrimps
Half a cup of grated carrot
1 cucumber, sliced
1 fresh red chilli, finely sliced (optional)
1/2 cup coriander, roughly chopped
4 tablespoons mayonnaise
1 tbsp soy or hoisin sauce
1 tbsp sesame oil
1 clove garlic, finely chopped
Method
Heat 1 tablespoon of sesame oil in a fry pan and add garlic shrimp.
Add 1 tablespoon of soy or hoisin sauce and stir fry until shrimp are cooked through and coated with flavour.
Spread mayonnaise evenly on to baguette halves, top with grated carrot, and sliced cucumber. Divide your cooked shrimp onto each half and top with fresh coriander and chopped chilli (optional). Squeeze fresh lime juice on top.
Serve and enjoy!
ele Tip – you can substitute the shrimp for cooked chicken or grilled tofu in this recipe
