Honey and Miso Chicken Traybake by Leah Itsines

When weeknights are busy, a one-tray dinner is hard to beat, especially when it delivers this much flavour with so little effort. From Leah Itsines’ cookbook Healthy Meals For Busy People, this Honey and Miso Chicken Traybake combines juicy chicken thighs, baby potatoes, asparagus and broccolini with a sticky, savoury-sweet glaze of miso, honey, ginger, garlic and a little chilli. Everything cooks together in one tray, making it an easy option for dinner, meal prep or leftovers the next day. Serve it with steamed rice for something comforting, or keep things lighter with a fresh mixed salad.

Ingredients

SERVES 4 | PREP TIME 10 minutes | COOK TIME 35 minutes

4 large skin-on boneless chicken thighs, trimmed

10 baby potatoes, halved

1 bunch (about 150 g/5½ oz) asparagus

1 bunch (about 150 g/5½ oz) broccolini

Steamed basmati rice or a mixed salad, to serve

HONEY-MISO PASTE

1 tablespoon white miso paste

2 tablespoons sesame oil

2 garlic cloves, crushed

2 cm (¾ in) knob of ginger, grated

2 spring onions (scallions), thinly sliced

2 teaspoons gochujang or chilli paste

2 tablespoons honey

2 tablespoons water

Method

  1. Preheat the oven to 180°C (350°F) fan-forced. Line a large baking tray with baking paper.
  2. To make the honey-miso paste, combine all the ingredients in a bowl and mix well.
  3. Place the chicken thighs and potatoes into the prepared baking tray. Pour over three-quarters of the miso mixture and toss to coat. If you have time, you can leave this to marinate in the fridge for as long as you can before cooking.
  4. Bake for 15 minutes. Add the asparagus and broccolini and the remaining miso mixture then toss to coat, and bake for a further 20 minutes or until the chicken is browned and cooked through. Serve with rice or a salad.

This is a perfect meal prep recipe, but also, the chicken is great for leftovers! Throw it into a wrap, pies or a salad.

Can I make this honey and miso chicken traybake ahead of time?

Yes. You can prepare the honey-miso paste in advance and coat the chicken and potatoes before storing them covered in the fridge. The extra marinating time will also help the flavours develop.

What type of miso should I use?

White miso is best for this recipe because it has a milder, slightly sweeter flavour that works well with honey, ginger and sesame oil.

Can I use chicken breast instead of chicken thighs?

Yes, although chicken breast can dry out more quickly than thighs. If you substitute it, keep an eye on the cooking time and remove the chicken once it is cooked through.

Can I use bone-in chicken thighs?

You can, but they will generally need longer to cook. Make sure the chicken is completely cooked through before serving and adjust the baking time if necessary.

Is gochujang very spicy?

Gochujang has some heat, but it also has a slightly sweet and savoury flavour. If you prefer a milder dish, reduce the amount or use a gentler chilli paste instead.

What can I serve with honey and miso chicken?

Steamed basmati rice is a great option because it soaks up the sticky miso sauce. You can also serve it with brown rice, quinoa or a simple mixed salad.

Can I swap the vegetables?

Absolutely. Green beans, zucchini, capsicum, cauliflower or Brussels sprouts can all work well. Just keep in mind that different vegetables may need slightly different cooking times.

How do I store leftovers?

Allow the chicken and vegetables to cool, then transfer them to an airtight container and refrigerate. They are best eaten within three days.

What can I do with leftover honey and miso chicken?

The leftover chicken is very versatile. Slice or shred it and add it to wraps, salads, rice bowls, pies or sandwiches for an easy lunch the next day.

Is this recipe good for meal prep?

Yes. This traybake works particularly well for meal prep because the chicken, potatoes and vegetables can all be portioned into containers and reheated throughout the week.
