French toast is one of those recipes that seems super decadent, but is really quite a healthy breakfast, of course depending on how you make it. In this version, I’ve used OMG Oat Milk to create a creamy soak for the bread spiked with vanilla and cinnamon for a seriously wholesome and delicious dairy-free brunch.
For toppings you can use fresh fruit like berries and banana, coconut yoghurt or maple syrup. This is one fun weekend breakfast the whole family can enjoy.
Ingredients (serves 2)
4 slices of soft bread 2 eggs ¾ cup OMG Oat Milk ½ tsp vanilla extract ¼ tsp cinnamon ¼ tsp salt 2 tsp coconut oil, for cooking
Method
In a bowl, whisk together eggs, oat milk, vanilla extract, cinnamon and salt.
Heat a large pan over medium heat and add coconut oil.
Dip each slice of bread into the egg mixture, making sure to coat both sides well, soaking for about 30 seconds.
Place the bread slices in the pan and cook until golden brown, about 2-3 minutes per side.
Serve with your favorite toppings.
