Nothing says Aussie summer like a fresh and tasty prawn sandwich. This recipe is easy to make and perfect for a picnic or a barbecue. All you need are some juicy Tassal Australian tiger prawns, creamy aioli, tangy lemon juice, homemade chilli oil, crunchy lettuce, soft bread and my secret weapon – salt and vinegar chips.
Ingredients
Sandwich Ingredients 10 cooked Tassal Australian tiger prawns 4 sliced soft brown or white bread 1 tbsp garlic aioli 1 tbsp chilli oil (see recipe below) 1 pack salt & vinegar chips 1 cup iceberg lettuce, shredded
Chilli Oil Ingredients 10 long red chillis 1 tsp dried chilli 1 tsp ginger, minced 2 cloves garlic, minced ½ tsp lemon pepper Zest and juice of one lemon ¼ cup fresh oregano, chopped 2 cups olive oil 1 tsp salt flakes
Method
To make Chilli Oil
Place your oil in a pot and bring to sizzling temperature (5 minutes on medium heat).
Once your oil is hot, carefully add both kinds of chilli, ginger, garlic, lemon zest and let cook for 15 minutes until crunchy.
Take off the heat, and add lemon juice and oregano, let sit to chill, and place in a jar until needed.
To make the Tiger Prawn Sandwiches
In a mixing bowl add the garlic aioli, chilli oil and prawns. Season with salt and pepper, and mix until combined.
To assemble your prawns sandwiches, add 1-2 tbsp of prawn mix on a slice of bread, top with shredded iceberg lettuce and a handful of salt and vinegar chips.
Serve immediately with a handful of napkins to catch the crumbs 🙂
