The team at F45 has created this delicious Chicken Fajita Recipe that is so healthy and packed full of delicious ingredients. It is a perfect weeknday dish that is easy to make and will keep you satisfied post-workout.
Ingredients
700g chicken breast fillet
120g cos lettuce
180g avocado
160g tomato
80g spring onion
160g canned corn kernels
280g canned black beans
10ml olive oil
1 lime
10g red chilli
2tsp dried oregano
2tsp ground paprika
2tsp cumin
2 garlic clove
15ml olive oil
Pinch of Himalayan salt
Method
1. Begin first by marinating the chicken breast strips in oregano, paprika, cumin, crushed garlic and red chilli.
2. Heat olive oil in a non-stick fry pan over medium heat, and cook the chicken strips for 3-4 minutes on each side or until cooked in the center. Once cooked set aside.
3. Between two bowls, add the cooked chicken strips, lettuce, avocado, tomato, shallots, black beans and canned corn.
4. Drizzle lime juice and olive oil over the top. Season with a pinch of salt.
