This pizza is simple, quick and delicious. The addition of truffle oil adds a complexity to the taste that works beautifully with the egg and cheese.
Ingredients
1 x pizza base (store bought or home made)
2 tablespoons of tomato paste
1 tablespoon of olive oil
1 cup of grated cheese (half mozzarella and half cheddar)
1 free range egg
200g of baby spinach
Truffle oil (to serve)
Sea salt and cracked black pepper
Pre-heat oven to 200 degrees celcius. Mix tomato paste and olive oil, season with salt and pepper and spoon over pizza base. Top with cheese and place in oven. Cook for about 8 minutes until cheese is melting but not golden brown. Remove from oven and crack the egg on top. Return to oven for approximately 8-10 minutes until the cheese is golden brown and the egg is cooked to your liking. While the pizza is cooking wilt spinach in a saucepan over a low heat. Drain and squeeze excess liquid from the wilted spinach. Remove pizza from oven, top with spinach, drizzle with truffle oil and season with cracked pepper. Enjoy!

I’m just imagining the runny egg yolk mixing with the oil and the spinach. I’m really hungry right now, but the idea of those crisp edges that spinach gets in the oven is so appealing.
