Menemen Recipe – Turkish Scrambled Eggs with Tomatoes

Menemen, a staple in Turkish cuisine, is more than just scrambled eggs; it’s a colorful fusion of fresh tomatoes, eggs, and a mix of aromatic spices, reflecting the warmth and richness of Turkish culture. Perfect for those mornings when you crave something savory and satisfying, this recipe is easy to prepare yet loaded with flavor. Enjoy!

Ingredients (serves 2)

  • 4 truss tomatoes
  • 1 tbsp unsalted butter
  • 1/2 finely chopped brown onion
  • 2-3 Turkish chilli peppers (alternative: banana peppers)
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • 1 tsp crushed Aleppo pepper (alternative: hot paprika)
  • 4 pasteurised eggs
  • Optional: 2-3 piece bay leaves
  • Garnish: Finely chopped parsley

Method

  1. Cook the butter in a pan on medium heat, add chopped onion and peppers. Stir regularly until both are completely soft, roughly 4 to 6 minutes.
  2. Grate the tomatoes into the pan discarding the skin.
  3. In a seperate bowl, whisk the eggs and pour into the pan.
  4. Add salt, black pepper, crushed Aleppo pepper. Bay leaves are optional, definitely boosts a pleasant aroma.
  5. Stir regularly, cook on medium heat simmering 3 to 4 mins.
  6. Final texture should be soft and on the runny side. Dipping the Turkish bread into your Menemen is a must.
  7. Garnish with parsley and serve immediately.
