Let’s face it, who has time to spend hours in the kitchen on a weeknight? Sometimes you need a simple, nutritious, quick and easy recipe that can be whipped up in under 30 minutes and that makes use of what you have in the fridge and pantry. Our simple pasta salad recipe ticks all of the boxes.
Ingredients
250g spiral pasta
1 red capsicum, diced in 1cm pieces
1 yellow capsicum, diced in 1cm pieces
1 punnet sweet cherry tomatoes, halved
100g cucumber, chopped in 1cm pieces
1 tin chickpeas
1 tin red kidney peas
1 tin sweet corn
100g cheddar cheese, cubed in 1cm pieces
Kewpie mayonnaise (optional)
Parsley, to serve
Dressing
1/4 cup extra virgin olive oil
1 garlic clove, crushed
1 tsp seeded mustard
1 tsp honey
Sea salt & cracked pepper
Method
1. Cook pasta according to packet instructions, once cooked drain and drizzle with olive oil, sprinkle with sea salt and set aside.
2. To make dressing mix all dressing ingredients together in a bowl until fully combined.
3. In a large bowl mix chopped red and yellow capsicum, cucumber, cherry tomatoes, chickpeas, red kidney beans and sweet corn. Add the pasta and dressing and mix to combine all ingredients.
5. Top with cubed cheddar cheese. Add a dollop of mayonnaise (optional) and garnish with fresh parsley. Enjoy!
