Try this deliciousCous Cous and Pear Salad with Tahini Dressing recipe by Susie Burrell
It is not quite summer here in Australia but we are already anticipating long summer days, balmy nights and light, simple food that screams summertime! We love this cous cous salad dish that is packed full of goodness and also tastes delicious.
We think it will be in high rotation over the warmer months at ele HQ and even in the cooler months, paired with some home baked bread and good company.
Ingredients (serves 4)
1/4 cup Mayver’s Unhulled Tahini 1 cup pearl couscous 1 lemon, juiced 2 tsp honey 2 cups rocket 1 medium pear, thinly sliced 1/2 red onion, thinly sliced 100g feta cheese 1 cup parsley, roughly chopped 1 cup roasted walnuts, roughly chopped 1/4 cup sugar-reduced craisins
Method
Cook the pearl couscous according to packet instructions, set aside to cool.
Meanwhile, prepare the tahini dressing. Whisk together the Tahini, lemon juice, honey and 2 tablespoons of water to form a smooth consistency.
To assemble the salad, place the cooked couscous, rocket, pear, red onion, feta and parsley in a large serving bowl. Drizzle over the tahini dressing and toss to combine.
Season well with salt and pepper. Top with walnuts and craisins.
ele Tip – this salad is delicious on its own or served as a side salad to fish or meat. It is also a great lunch box option for work and school lunches.You can also use normal cous cous if you can’t get find pearl cous cous in your local food store or supermarket.
