Eat: Cherry Tomato, Pomegranate, Red Pepper and Feta Salad

This is our favourite ELE salad at the moment, the tartness of the tomatoes combined with the sweet jewel-like pomegranate seeds and creamy feta combine perfectly to create a salad that looks beautiful and tastes amazing. To make combine 1 punnet of cherry tomatoes (halved) with half a red pepper (capsicum) finely chopped, a handful of pomegranate seeds and 1/2 a cup of cubed feta. Season with salt and pepper, drizzle with olive oil and garnish with flat-leaf parsley. Enjoy!
