Cherry Tomato, Pomegranate and Red Pepper Salad Recipe

Try our delicious Cherry Tomato and Pomegranate salad recipe which is packed full of flavor and goodness!

This is our favorite salad at the moment, the tartness of the tomatoes combined with the sweet jewel-like pomegranate seeds and creamy feta combine perfectly to create a salad that looks beautiful and tastes amazing. Plus it is so good for you and packed with antioxidant ingredients.

This salad is easy to make and accompanies grilled white fish, chicken or lamb perfectly. It is also delicious simply served alongside crusty bread and homemade hummus.

Ingredients

1 punnet cherry tomatoes, halved

Half red pepper (capsicum), finely chopped

1/4 cup pomegranate seeds

1/2 cup feta cheese, cubed

1 tablespoon flat leaf parsley, chopped

Olive oil

Salt and pepper

Method

To make combine cherry tomatoes, red pepper, pomegranate seeds and cubed feta cheese.

Season with salt and pepper, drizzle with olive oil and garnish with flat-leaf parsley. It really is that simple! Enjoy!
