There is something about homemade slow cooked baked beans that is so comforting and delicious. Our version requires little effort and can be made with ingredients from the cupboard- perfect if you haven’t had time to do the grocery shopping!
Ingredients
500g of tinned white cannellini beans, washed and drained
800g of tinned chopped tomatoes
1 onion, diced
1 clove of garlic, crushed
1 tablespoon of maple syrup
1 teaspoon of Dijon mustard
1 tablespoon of Worstershire sauce
Pinch of chilli flakes
Olive oil
Basil leaves, to serve
Goats cheese, crumbled – to serve
To make gently fry onions and garlic on low heat in olive oil until translucent. Add tomatoes, beans, mustard, Worstershire sauce, chilli and maple syrup. Turn heat to very low, and gently cook for 2 hours, stirring occasionally. Serve on top of crusty toasted bread, topped with basil leaves and crumbled goats cheese. ELE tip – these beans are great on baked potatoes, in a jaffle toasted with cheese or tossed through fussili pasta. Enjoy!
