On paper this combination of fried eggs and pesto really shouldn’t work but it is simply delicious!
You may have seen the viral TikTok of eggs being fried in the pesto sauce straight in the saucepan, however we prefer this method of frying the eggs first and topping on toasted bread spread with pesto sauce.
The key is to use homemade pesto and a good quality bread, sourdough is our preference for this dish. We love a traditional basil pesto in this dish however our Pesto Rosso (red pesto) also works great and is something a little different to serve up to friends and family.
It is a great recipe for breakfast, brunch or ‘breakfast for dinner’. Enjoy!
Pesto Eggs Ingredients (serves 1)
2 slices sourdough bread
2 tbsp pesto (get our recipe for homemade pesto here)
1 tbsp of finely grated Parmesan cheese
2 tbsp olive oil
Sea salt and cracked black pepper, to serve
1. In a frypan on medium heat add 1 tbsp olive oil. Crack in egg and fry sunny side up until the egg is crispy golden on edges and whites are fully set (approx 3-4 mins).
2. While the egg is cooking toast sourdough. Remove from toaster, spread with fresh pesto.
3. Top toast with fried egg, drizzle with remaining olive oil, sprinkle on Parmesan cheese. Season with salt and pepper and serve immediately.
