Creamy Avocado And Lime Dip

This delicious avocado dip is packed full of good fats and is the perfect alternative to less healthy store-bought dips. It also doubles as a topping for baked potatoes or nachos, a sauce to toss through fresh pasta or as a spread for sandwiches and rolls.

It’s ridiculously simple to make, making it pretty much foolproof for even the most novice home cook. The trick is picking perfectly ripe avocados and juicy limes so that you get that beautiful vivid green colour and zingy lime hit.

Creamy Avocado and Lime Dip

Ingredients

2 avocados, peeled and stones removed

3 tablespoons of natural Greek yoghurt

1 lime, plus additional to serve

1/4 cup chopped continental parsley leaves

1/2 teaspoon of dried red chilli flakes

Method

1. Add avocado, yoghurt, lime juice and parsley to a food processor or blender. Season with salt and pepper.

2. Blend on high until the avocado mix is smooth and creamy.

3. Spoon in to a bowl and serve sprinkled with chilli flakes (to taste) and a squeeze of fresh lime juice. Enjoy!

      Thanks! Consistency is what we look for – the same texture, colour and firmness all over, without any real soft spots. It should be lightly soft but not at all mushy, occasionally we still get a dud though!
