These delicious Marinated Chicken Marylands are Asian inspired and are perfectly easy to create for a weeknight dinner or a Sunday lunch with family and friends.
We love to serve these with a flat rice noodle salad or a simple slaw or steamed basmati rice.

Marinated Chicken Marylands Recipe
Ingredients (serves 4)
4 chicken Marylands
Marinade
1/3 cup soy sauce
1/4 cup honey
Thumb sized piece of ginger, chopped or grated
1/2 fresh red chilli, thinly sliced
1 clove of garlic, crushed
1 tablespoon of sesame seeds
1 orange, quartered
1 lemongrass stick, cut in to 1 inch pieces

Method
Mix all marinade ingredients in a jar.
Marinate the chicken in a roasting dish if your cooking that day or place in a covered container for 1-2 days before cooking.
Pour 3/4 of the marinade mix over the chicken in a baking paper lined oven dish.
Squeeze a quarter of the fresh orange over the top and place the remaining orange pieces in to the pan. Add the lemongrass.
Bake at 180c (350F) for an 1.5 hours, rotating the dish until the chicken is nicely coloured and cooked through.
Rest for half an hour and pour over the extra marinade that you reserved just before serving. Enjoy!
