This salad is light, healthy and takes less than ten minutes to make. Serves 2.
2 fillets of hot smoked salmon (store brought)
1 cup of beetroot leaves
1 cup of baby spinach leaves
100g feta, cubed
1 tomato, seeds removed and finely chopped
1/4 cup of lemon juice
1/4 cup of olive oil
2 teaspoons of honey
Salt & pepper (to taste)
Make the dressing by mixing all of the ingredients and stirring until combined. Dress the beetroot and spinach leaves with the dressing and divide among two plates. Top with hot smoked salmon fillets, add feta and finely chopped tomato. Enjoy!
