Who doesn’t love pasta? It is one of life’s great culinary pleasures, and when it is simple to cook, tastes delicious and ready in 15 minutes it makes the perfect quick dinner option. Our lemony, garlicky fettuccine is a go-to staple, just make sure you use quality, fresh ingredients to get the best results.
Ingredients
300 grams of fettuccine
2 cloves of garlic, peeled and crushed
1 punnet of cherry tomatoes, halved
1 large lemon, half juiced, half finely sliced
Handful of fresh basil leaves
1/4 cup of olive oil
Aged parmesan cheese, to serve
To cook, bring a large pot of salted water to the boil and add fettuccine. While the fettuccine is cooking lightly fry garlic and tomatoes in a large saucepan in olive oil until the garlic is translucent and tomatoes are just softening (it should only take a minute or so). Remove from heat and set aside. Once the fettuccine is cooked al dente, remove from heat and drain. Add the fettuccine and lemon juice to the tomatoes and garlic, stir through and return to heat for just a minute or two. Season well with salt and pepper. Serve in pasta bowls, topped with grated parmesan cheese, torn basil leaves and sliced lemon. Enjoy!
