Homemade pizza is always popular, and this version that combines some of our favourite Mexican flavours is always a crowd pleaser.
1 pizza base
1/2 cup of good quality tomato purée
1 cup of cheddar cheese, grated
1 sweet corn
1/2 red pepper, chopped
1 chilli, finely sliced
1/2 an avocado, sliced
2 tablespoons of sour cream
Lime juice, to serve
To make boil sweet corn in a saucepan for 10 minutes. Drain and transfer to a hot oven and roast until cobs are golden. Allow to cool and remove corn kernels with a sharp knife. Layer pizza base with tomato purée, half of the grated cheese, red pepper, corn and chilli. Top with remaining cheese and bake in a hot oven for 10-15 minutes until cheese is golden. Remove from oven, serve with sliced avocado, dollops of sour cream and a squeeze of fresh lime. Enjoy!
