Homemade pizza is always popular, and this version that combines some of our favourite Mexican flavours is always a crowd pleaser.
1 pizza base
1/2 cup of good quality tomato purée
1 cup of cheddar cheese, grated
1 sweet corn
1/2 red pepper, chopped
1 chilli, finely sliced
1/2 an avocado, sliced
2 tablespoons of sour cream
Lime juice, to serve
To make boil sweet corn in a saucepan for 10 minutes. Drain and transfer to a hot oven and roast until cobs are golden. Allow to cool and remove corn kernels with a sharp knife. Layer pizza base with tomato purée, half of the grated cheese, red pepper, corn and chilli. Top with remaining cheese and bake in a hot oven for 10-15 minutes until cheese is golden. Remove from oven, serve with sliced avocado, dollops of sour cream and a squeeze of fresh lime. Enjoy!
This looks yummy! However, as a Mexican, I would top it with spicy salsa instead of cream. That would make it an authentically mexican!

I bet this is SOOO flippin yummy. A pizza place stopped making one of my all time favorite pizzas. Alot of people did not order it because it sound too weird, but it was amazing. It was called The Fiesta and was Mexican style. The sauce with a mix of refried beans and something else I can’t remember. Any way, I bet this is so good too!

I wasn’t sure about this as I’m generally a puritan when it comes to pizza. But I have to say, it looks damn good! Like a flattened out, artfully arranged vegetarian taco. Lovely work. I might have to give it a crack.
