Ingredients (makes 120

Prep Time: 30 minutes + 1 hour chilling

2 cups (300g) dried apricots
1¼ cups (100g) desiccated coconut, plus 2 tbsp extra (optional)
¼ cup (45g) pitted medjool dates

Method

You’ll find the three ingredients needed for this wholesome slice in your pantry!
Line a 20cm square cake tin with baking paper, allowing the paper to overhang the 2 long sides.
Place all the ingredients in a high-speed blender or food processor. Blend or process until the mixture resembles wet sand and can be moulded. (Don’t over-process or you will have a paste.)
Transfer the mixture to the prepared pan and use a glass or the back of a wooden spoon to press down firmly to cover the base of the pan. Place in the fridge for 1 hour or until set.
Cut into squares and sprinkle with the extra coconut, if desired
