Eat: Banana Bread with Double Cream and Cinnamon

This is our favourite banana bread recipe, it is delicious served warm with sliced banana, double cream and cinnamon or perfect on its own.

Ingredients

3 ripe bananas

1/3 cup of butter, melted

1 cup of sugar

1 1/2 cups of plain flour

1 teaspoon of vanilla

Pinch of sea salt

1 teaspoon of baking powder

1 egg, beaten

Double cream and cinnamon (to serve)

Pre-heat oven to 180 degrees celcius. Line a loaf tin with baking paper. Mash ripe bananas until they are soft and stir through melted butter. Add the beaten egg, vanilla and sugar. Add flour and salt and mix well so that all ingredients are combined. Pour in to the prepared loaf tin and bake in the oven for about 50-55 minutes, testing with a skewer. The bread will be done when the skewer comes out clean. Remove from oven and allow to cool slightly. Serve warm with double cream, sliced banana and cinnamon. ELE tip – this banana bread is also great cold, perfect for work or school lunch boxes. Enjoy!
