Avocado Smash is one of our favourite simple and healthy things to make. This one combines two of our favourite superfoods – kale and almonds.
Ingredients
Half an Avocado, roughly mashed
1/2 of a cup of kale, finely chopped
Handful of almonds, chopped
Olive oil
Juice of half a lemon
Red cress leaves
To make combine all ingredients (except for the cress), and mix through. Season with salt and pepper. Top on your favourite toasted bread, mix through pasta or serve with fresh green leaves and roast chicken. Enjoy!
I love avocado smash but you’ve put a couple of interesting twists in there with the kale and almonds. Looks absolutely delicious!
