Eat: Pea, Mint and Feta Soup

Pea, Mint and Feta Soup

Regular readers of the ELE blog will know that we love simple, healthy and delicious recipes that are easy to make and taste great. This soup is no exception, it has only five ingredients and takes about 10 minutes from start to finish.  It is delicious hot on a wintery night or chilled on a warm summers day.

Ingredients

3 cups of cooked peas (fresh or frozen)

1 cup of hot chicken (or vegetable) stock

1/2 cup flat leave parsley

1/2 cup mint leaves

Feta (to serve)

Add cooked peas, stock, parsley and mint to a blender (make sure your blender can handle hot liquids!) and blend until smooth and creamy. Add salt and pepper to taste, ladle in to a bowl or hollowed out sour dough loaf, top with crumbled feta and serve. ELE tip – more or less stock can be added to make the soup thinner or thicker- depending on your preference. Enjoy!

  8. I’ve checked out a few of your recipes and I feel like you are achieving really well the same type of food I like to depict on my blog. I love the idea of food that detoxes and using farm fresh ingredients when possible. All the food is semi-light, but you indulge in the good things. Amen!
