Regular readers of the ELE blog will know that we love simple, healthy and delicious recipes that are easy to make and taste great. This soup is no exception, it has only five ingredients and takes about 10 minutes from start to finish. It is delicious hot on a wintery night or chilled on a warm summers day.
3 cups of cooked peas (fresh or frozen)
1 cup of hot chicken (or vegetable) stock
1/2 cup flat leave parsley
1/2 cup mint leaves
Feta (to serve)
Add cooked peas, stock, parsley and mint to a blender (make sure your blender can handle hot liquids!) and blend until smooth and creamy. Add salt and pepper to taste, ladle in to a bowl or hollowed out sour dough loaf, top with crumbled feta and serve. ELE tip – more or less stock can be added to make the soup thinner or thicker- depending on your preference. Enjoy!
What a gorgeous green soup! I think I might try it with basil in place of the mint!
Thank you! The basil will be a great substitute
Peas and mint…who have thought?! Remind me of this one in a month when I have peas than I know what to do with!!
It will be perfect with home grown peas!
minus the feta and I have a new meal to try! 😀
It works great without the feta!
What a fantastic colour and very simple, great recipe!
Looks super cool and probably tastes even better! Thank you for sharing 🙂
This sounds marvelous!
I’ve checked out a few of your recipes and I feel like you are achieving really well the same type of food I like to depict on my blog. I love the idea of food that detoxes and using farm fresh ingredients when possible. All the food is semi-light, but you indulge in the good things. Amen!
your images are very appetising as well!
Your blog has got wonderful pictures. I loved them. I had a small question. What do you use to take these beautiful pictures, DSLR or just the a phone camera. If phone then which phone do you use, if camera then which camera do you use….
Hi we usually just use the iPhone 6s or Samsung phones as we are usually on the move! Thanks
