Eat: Sweet Corn with Smoky Herb Butter

How delicious is fresh sweet corn, smothered in butter and salt and served piping hot? Our Smoky Herb Butter adds a beautiful smoked flavour to the corn and is incredibly easy to make.

Ingredients

3 whole sweet corn, ends removed and chopped in three

2 tablespoons of butter

2 teaspoons of smoked paprika

1/4 of a cup of mixed chopped fresh herbs (chives and parsley)

Salt and pepper, to serve

To make, cook sweet corn in boiling water for about 10-15 minutes until it is cooked through. While the corn is cooking, mix butter, smoked paprika and half of the herbs together. Once the corn is cooked, drain well and serve topped with butter mix, salt, pepper and the rest of the mixed herbs. Enjoy!

ELE tip – this sweet corn also works great as a side dish to your favourite meat dishes.

  1. Couldn’t agree more – not much beats corn smothered in butter. Have you tried roasting corn for 30 mins in the oven with the husk on? Then remove , add butter and pop back to cook for a few mins longer – it takes the flavour to a whole new level…..

    • We have, it is beautiful roasted and great adding the roasted kernels to salads etc. we haven’t added butter before putting in the oven so will try that next time. Thanks!

  3. On the topic of corn,I found the best non-gmo corn on the cob at TJ in NYC. It is so good, it was edible right without cooking ( not recommended) Great post about sweet corn
