Chewy Coconut Chocolate Cookies by Sarah Glover

These delicious and simple Chewy Coconut Chocolate Cookies from Sarah Glover’s cookbook Wild Child: Adventure Cooking with Kids are perfect to bake with kids.

Sarah cooks hers using a Traeger grill, however you can also use the oven, baking for about 8-10 minutes at 180C (350F) if you don’t have a grill to cook with.

Chewy Coconut Choccie Cookies by Sarah Glover

Ingredients (20 cookies)

Cooking time: 15mins
Prep time: 15mins

2 eggs
90g sugar
200g coconut desiccated
75g butter melted, cooled to room temp
100g chocolate chopped
Good pinch salt

Chewy Coconut Choccie Cookies

Method

Set a grill to 190C.
Line a baking tray with parchment paper.
In a bowl add the eggs and sugar and whisk till mixed, add the coconut flakes, salt, chocolate and butter and mix until fluffy. Let the batter sit for 20 mins, so that the coconut can absorb for a little bit.

Spoon dollops of cookie dough onto the tray and shape into a pyramid, place in the grill and cook for 10-15 mins until golden on top, sprinkle with sea salt.
