The team from Chiva-Som has shared a delicious and healthy recipe for Broccoli Guacamole with us that packs a healthy green punch.
This vegan-friendly, gluten-free broccoli guacamole is packed with nutritional goodness without compromising on flavour and taste.
Broccoli is an great source of protein, fibre, iron, selenium and potassium along with an array of vitamins, while avocados contain excellent quantities of magnesium and potassium and are excellent for the heart, vision, digestion and detoxification.
Combine these ingredients together and you’ve got a wellness winner on your hands. Eat it is as part of a nutritious breakfast or pair it with a main course to enjoy a healthy, delicious and balanced dish.
100g broccoli, finely chopped
300g avocado, mashed
30g cherry tomatoes, diced
3 sweet basil leaves, chopped
8g lime juice
A pinch of Salt & Pepper
20g red onion, finely chopped
1. Blanch broccoli in boiling water until cooked. Remove and cool.
2. Mix all ingredients, including broccoli, together in a bowl.
4. Season with lime juice, salt and pepper and toss well.
3. Keep cool until ready to serve.
