Radicchio, Roast Chicken and Blood Orange Salad

Salads don’t all have to be green! We love this simple and easy to prepare salad that is the perfect mix of tart from the radicchio, and sweet from the blood orange. Pomegranate seeds add a little extra zing and the creamy goat’s curd balances the other flavours beautifully.

You can omit the chicken if you prefer, or if you would like to serve the salad as an accompaniment to a main meat dish. Our favourite way to enjoy this salad it is at lunch, with a chunk of crusty bread ready to mop up the delicious orange juices.

Ingredients

1 Radiccio, halved and leaves separated

50g goats curd

100g roast chicken, shredded

1 tbsp pomegranate seeds

Shaved Parmesan cheese, to serve

Parsley, to garnish

Dressing

1 blood orange, juice and zest

1 tbsp olive oil

Salt & pepper, to season

Method

1. Layer radicchio leaves in a shallow bowl and top with shredded roast chicken and goat’s curd.

2. To prepare dressing, mix all of the ingredients together.

3. Drizzle salad with dressing, top with shaved Parmesan, fresh parsley leaves and cracked pepper. Serve and enjoy!
