We have had different versions of this simple Italian salad over the years, some of our favourites have been in restaurants in Milan and Rome in Italy, and more recently when we enjoyed a version of this salad at a local Australian winery. We loved the addition of delicious homemade pesto, drizzled on the tomatoes, to give it a delicious basil hit.
Creating this salad at home is so easy, it really is all about the quality of the ingredients, so try to get your hands on the freshest and juiciest tomatoes you can find and make the pesto at home yourself – there really is nothing better than freshly made pesto sauce.
Ingredients
1 large red tomato
1 large yellow tomato
4 – 5 cherry tomatoes, mixed
1 burrata cheese ball
2 tablespoons of homemade pesto sauce
1 tbsp of extra virgin olive oil
Sea salt
Cracked pepper
Method
1. Thinly slice the large tomatoes and arrange on a large plate. Sprinkle with salt.
2. Scatter cherry tomato halves on top.
3. Place the burrata on top and drizzle with pesto sauce and olive oil.
4. Season with black cracked pepper. Serve and enjoy!
