These delicious cookies are the perfect Christmas treat and are so easy to make. The combination of brown sugar, golden syrup and butter combined with ginger and cinnamon creates a beautiful festive aroma while they are baking in the oven. They also make great (and cheap!) gifts, tied up in a pretty satin ribbon. Enjoy!
Ingredients
120g of softened butter
2 x tablespoons of golden syrup
40 grams of brown sugar
40 grams of white sugar
3/4 teaspoon of ground ginger
3/4 teaspoon of ground cinnamon
3/4 cup of plain flour
1/2 teaspoon of bi-carb soda
1/4 teaspoon of salt
Heat oven to 180 degrees celcius. Combine golden syrup, sugar and butter and mix until light and creamy. Sift in flour, salt, bi-carb, ginger and cinnamon and combine until a dough forms.
Roll about 20 small balls and place on a baking tray lined with a sheet of baking paper, leaving enough distance between them for the cookies to spread.
Bake in oven for about 12 minutes until the cookies are lightly golden.

These seem a little lighter than most christmas spice mixes, with no nutmeg or clove and only half the dark sugar they could have but I’m certainly not complaining, they really do look and sound delicious.
