Eat: Cheesy Baked Asparagus with Prosciutto

We love a recipe that is not only simple but also deliciously tasty and versatile and this Cheesy Baked Asparagus is exactly that.

It’s perfect as a side dish to roast chicken or baked fish, but it also works great as a simple lunch dish. It’s also delicious for breakfast, simply add a poached egg on top and serve with buttered sour dough and you will have a decadent breakfast that asparagus lovers will thank you for.

Asparagus is packed full of nutrients including folate, fibre and vitamins A,C,E and K which is an added bonus and if you want to make this dish a little more health focused, simply omit the prosciutto and go a little lighter on the cheese.


3 bunches of asparagus, woody ends removed

5 slices of prosciutto

125 grams of grated mozzarella cheese

1 tablespoon of olive oil

Sea salt & cracked pepper, to serve


Pre-heat oven time 180C (350F). On a flat baking tray lay a sheet of baking paper. Lay asparagus spears side by side on baking paper.

Lay prosciutto slices lengthways on top of the asparagus and drizzle with olive oil. Sprinkle with grated mozzarella cheese.

Bake in oven for approximately 15-20 minutes until the asparagus is cooked through and the cheese is golden and bubbling. Remove from oven and season with salt and pepper. Serve immediately. Enjoy!
