This salad is simple and tasty and is delicious served warm as a perfect accompaniment to roast chicken or lamb or as a light meal on its own.
Ingredients
150g fresh green beans, ends removed and sliced lengthways
1/4 cup of chopped walnuts
6 large green olives, sliced
4 anchovies, finely sliced
Handful of mint leaves, chopped
1/4 cup of olive oil
50g of feta cheese, sliced
To make, lightly sauté green beans and anchovies in olive oil over medium heat for about 2 minutes. Remove from heat and plate, top with sliced olives, walnuts, mint and feta. Drizzle with olive oil and cracked pepper and serve. Enjoy!
