Bubbling grilled gruyère cheese, sweet pickles and fresh baked sour dough bread combine to make the most delicious cheese toasties, the ultimate comfort food for any time of the day.
The trick to these toasties is the quality of the ingredients, in particular the gruyère cheese which is the perfect cheese for melting on toast. If you can’t get a hold of gruyère try a cheddar, you may not get the same stringy, gooey melt as gruyère but it will still be delicious.
Ingredients
4 thick slices of sour dough bread
100 grams of goat’s curd
4 pickles, sliced
4 slices of gruyère cheese
Method
Under a medium to hot grill toast bread slices on one side until golden. Remove from grill and on the untoasted side spread with goat’s curd and sliced pickles. Layer each toastie with a slice of gruyere cheese. Return to grill and cook for 4-5 minutes until cheese is golden and bubbling. Remove from grill, season with cracked black pepper and serve immediately. Enjoy!
