Ridiculously rich and decadent, these triple chocolate salted cookies are sure to please all of the chocolate lovers in your life. The addition of a little pink salt adds the perfect balance of sweet and salty and makes these cookies so more-ish it’s almost impossible to stop at eating just one.
The trick to these cookies is to use good quality dark chocolate and pink salt and to also check that the batter isn’t too runny so that your cookies will stay intact in the oven. Apart from that they are fairly foolproof and aren’t difficult to make, perfect to whip up whenever you have a sweet craving.
2/3 of a cup of plain flour
3 tablespoons of cocoa powder
1 teaspoon of baking powder
1/2 a teaspoon of pink salt, plus extra to serve
1/2 a cup of white sugar
1/2 a cup of brown sugar
50 grams of butter
200 of good quality dark chocolate, roughly chopped
3/4 of a cup of dark chocolate chips
1 teaspoon of vanilla esssence
Pre-heat oven to 180C (350 F). In a large bowl mix together the flour, cocoa powder, baking powder, salt and sugars and mix through.
Melt dark chocolate and butter gently together in a metal bowl over a saucepan of simmering water. Remove from heat and allow to cool.
In a separate bowl gently whisk eggs, add vanilla essence and then combine with the melted chocolate mix.
Stir the chocolate mix in to the dry ingredients and stir thoroughly until all ingredients are combined and you have a thick cookie batter. Gently stir in the dark chocolate chips.
Spoon out scoops of cookie dough on to a baking tray lined with baking paper, about 2-3 inches apart. As the dough will be quite moist you may want to use two spoons to shape the dough into a ball shape.
Bake in oven for 12 minutes. Remove from oven and allow to cool for about 10-15 minutes before sprinkling with a little pink salt. Serve and enjoy!
