With the weekend almost here we wanted to share an incredibly simple, delicious breakfast idea that will impress your loved ones (or even just yourself!).
Ingredients (makes 2)
4 slices of sour dough or ciabatta bread
2 free range eggs
1 punnet of grape or cherry tomatoes
2 tablespoons of hummus
1 cup of rocket
2 tablespoons of olive oil
Salt & pepper
To make, lightly fry tomatoes in 1 tablespoon of olive oil until the skins are slightly blistered. Remove from heat. In a frypan fry eggs in remaining olive oil until they are cooked to your liking.
In the meantime lightly toast bread and spread with hummus. Assemble on to plates, top with fried egg and rocket. Add blistered tomatoes and season with salt and pepper. Enjoy!
