Beta carotene is the orange/yellow pigment that gives many vegetables their glorious bright colour. It is converted in our livers to vitamin A, which is essential for overall human health.
The vitamin A produced by this super pigment is vital for skin health, immunity and eye health and vision. It has shown to potentially reduce cognitive decline and has been linked to the prevention of numerous illnesses and ailments.
Packed full of antioxidents that protect the body from free radicals, foods rich in beta carotene are some of the original superfoods.
There are a number of fruits and vegetables rich in this pigment including apricots, sweet potatoes, carrots, pumpkin and red and yellow peppers.
If possible, the best way to get this essential vitamin is through diet, so finding delicious recipes that are packed full of beta carotene is important. Luckily these fruits and vegetables are delicious (for most of us!) so it isn’t too difficult.
Hearty soups, crunchy salads and fresh squeezed juices and are just some of the ways to get more beta carotene in to your diet. We love roasting carrots drizzled with honey as a side to a main meal, adding fresh peppers to pizza or simply snacking on carrot sticks dipped in homemade hummus.
Eating a well balanced diet which incorporates beta carotene is the great way to boost your intake of this super pigment.
