Eat: Simple Asparagus and New Potato Tart

Its springtime in Australia and this tart makes the most of the fresh spring ingredients currently in season.  It is also super simple to make and tastes delicious.  Prefer to watch us make this recipe?  Click here to watch on YouTube.

Ingredients

1 square sheet of puff pastry (store-brought or homemade)

4 baby new potatoes, par-boiled and sliced

Bunch of baby green asparagus

1 egg

2 tablespoons of grated Parmesan cheese

100 ml of thickened cream

1 teaspoon of Dijon mustard

Handful of fresh chives

Fresh mint leaves, to serve

Sea salt and cracked pepper

To make, pre-heat oven to 180 C/350 F. Scour a 1 inch border around puff pastry with a sharp knife.  Mix cream, parmesan cheese, egg and mustard in a bowl and season with salt and pepper  Spoon 2/3 of the egg mix on to the base of the tart and spread across evenly.  Top with par-boiled potatoes and asparagus spears.  Drizzle remaining egg mix on top. Using kitchen scissors to cut chives and scatter across tart. Season with pepper and bake in oven on a sheet of baking paper for about 15 minutes or until tart is golden brown and asparagus is cooked through. Remove from oven, scatter with mint leaves. Cut in to quarters and serve with a simple green salad. Enjoy!
